Bardolino
The zone of production of the Bardolino classico D.O.C. includes the entire territory of Bardolino, Garda and an ample portion of the municipalities of Lazise, Cavaion Veronese, Costermano and Affi. The denomination Bardolino, without the specification "classico", the wines is reserved for the wines which are produced in the municipalities of Torri del Benaco, Caprino Veronese, Rivoli Veronese, Pastrengo, Bussolengo, Castelnuovo del Garda, Sona, Peschiera del Garda, Sommacampagna e Valeggio sul Mincio. The Bardolino and the Bardolino classico are of red clear ruby color changing into garnet red with the ageing. The odor is delicate with light perfume of violet. The taste is dry, sapid, a little bitter, harmonic.
The Bardolino superiore, recognized as D.O.C.G. (controlled and guaranted origin denomination), is aged at least 1 year from the 1 November of the year of production of the grapes. The varieties of grapes are the same of these of the Bardolino.
The Bardolino novello is also a wine with the D.O.C..
It is bottled within the 31 of December of the year of production. It has clear ruby color, odor: intense, with flavours of fruit (it remembers the raspberry, the strawberry, the marasca). Taste: dry, delicate, sapid, a little bitter, sometimes slightly sparkling.
The Bardolino chiaretto (rosè), obtained with a minimal maceration of the peels, has a pink color which evolves to garnet red with the ageing. Odor: with flavours of fruit and delicate perfume; Taste: delicate, sapid, slightly bitter, sometimes slightly sparkling.
The Bardolino chiaretto exalts the typical perfumes and the tastes of the Bardolino.
The Bardolino chiaretto spumante is a brut (sparkling wine) obtained with the methods of natural fermentation and has a thin foam with elegant and persistent nuances. Color: pink changing to the garnet red with the ageing. Taste: delicate, sapid, slightly acidulous.

Lugana
The Lugana D.O.C. is produced in a small strip of the southern area of LakeGarda: it is the portion going from Desenzano to Peschiera and inland up to the hills of Pozzolengo and Lonato, in big part inside the province of Brescia. The Lugana must be produced at least for 90% with grapes of the variety Trebbiano of Lugana. The color of the wine is pale yellow or green, with tendency to the slightly gilded yellow with the ageing, especially in the version of the Lugana superiore. The perfume is delicate and typical. The taste: fresh, harmonic, particulary delicate.
The Lugana Spumante confirms the harmony of the origin’s wine with nuances of vanilla.

Garda, Garda Classico
The controlled denomination of origin Garda was born in year 1996. It interests a consistent number of wines produced in a vast area, which includes the brescian coast of Lake Garda and its hinterland and a very wide part of the province of Verona (from the east coast of Lake Garda up to the area on the east side of Verona). The denomination Garda classico has reserved for determined wines' typologies (white, claret, red, superior red, Groppello and Groppello superiore) produced on the brescian coast of Lake Garda and in its hinterland (Bedizzole, Calvagese, Desenzano, Gardone Riviera, Gargnano, Gavardo, Limone sul Garda, Lonato, Manerba, Moniga, Muscoline, Padenghe, Polpenazze, Pozzolengo, Puegnago, Roè Volciano, Salò, San Felice del Benaco, Sirmione, Soiano, Tignale, Toscolano Maderno, Tremosine, Villanuova sul Clisi, Vobarno).
The Garda classico Groppello, is a red ruby wine; it has fresh perfume, with flavours of fruit, slightly aromatic. Taste: delicate, sapid, with deep flavour of almonds.
The Garda classico Groppello riserva has a intense ruby colour and a tannic taste.
The Garda classico aims to replace the preceding denominations D.O.C. Riviera del Garda bresciano und Colli Morenici Mantovani del Garda, on which it has layed itself.
The typologies of the D.O.C. Garda are quite a lot. For the white wines, the denomination Garda with the specification Garganega, Pinot bianco, Pinot grigio, Chardonnay, Tocai, Riesling italico, Riesling, Cortese, Sauvignon has reserved for the wines coming from vineyards with a composition at least the 85% of the equivalent vinetrees.
For the red wines, the percentage of 85% is necessary to use the denomination D.O.C. Garda for the wines Cabernet, Cabernet Franc, Cabernet Sauvignon, Merlot, black Pinot, Marzemino, Corvine, Barbera.

Valpolicella
The wines’ D.O.C. Valpolicella come from grapes of the vines Corvina veronese (in the vineyards must be present with a percentage between 40 and 70%), Rondinella (between 20 and 40%) and Molinara (between 5 and 25%). For the production may be used also grapes of Rossignola, Negrara of Trento, Barbera and Sangiovese up to a maximum of 15%, as well as, other vines with redhead berry from the area of Verona.
The Valpolicella and the Valpolicella classico have red ruby colour, changing into garnet red with the ageing. The perfume is, delicate, characteristic; the taste is dry or velvet, a little bitter, sapid, harmonic. Wine has the specification of Valpolicella superiore or Valpolicella classico superiore if it has beeen produced by grapes with a particular natural alcoholic gradation and sold on the market after an ageing at least of 1 year (through the ageing in wood barrels it purchases in sturdiness and in ampleness of body).

Recioto e Amarone
The area between the east side of Lake Garda and the north side of the city of Verona is the zone which includes the sub-zones of Bardolino, Valpolicella, Soave e Gambellara. The last three sub-zones are characterized by the production of a wine which recently has obtained the label D.O.C.G.: the Recioto. The name comes from the word "recia" which means "ear" in the local dialect it and indicates the parts of the grape more facing the sun and therefore more ripened. Among the dry wines of the variety Recioto, the Amarone deserves a particular mention: it is one of the most famous wines of the region with a beautiful dark red ruby colour, with a characteristic perfume remembering the bitter almonds and with a strong, velvety and warm taste. Recioto and Amarone are wines characterized by the particular process of withering of its grapes.
The wine-making has made during the winter with the maceration of the grapes with a low temperature fermentation. The differentiation between the two wines depends on the techniques of production and refinement. The fermentation is about one month long for the Recioto and about 45-50 days for the Amarone. If the fermentation interests the totality of the sugars we obtain the wine Amarone, otherwise if remains a sugar residue, normally between 4 and 12% we obtain the Recioto. After the fermentation begin the phases of maturation and refinement, which are relatively brief for the Recioto and very long for the Amarone (the production regulation prescribes a minimal duration of 2 years). During these phases every technical interventions in the cellar are turned to favor or to lead the fermentation in order to obtain a Amarone or a Recioto. The refinement has made in small (barriques) and big wood barrels.
The Recioto is mellow, sometimes straight sweet, according with the characterization assigned by the producer.
The Amarone has a austere, dry, strong taste with flavours of leather and cinnamon. Colour: deep, bright, red ruby. The Amarone is a wine symbol of high quality as the Barolo for the Piedmont and Brunello of Montalcino for Tuscany.

Bianco di Custoza
The area of production of the Bianco di Custoza D.O.C. includes the municipalities of Sommacampagna, Villafranca di Verona, Valeggio sul Mincio, Peschiera del Garda, Lazise, Castelnuovo del Garda, Pastrengo, Bussolengo and Sona, all in the province in Verona. The name of the wine comes from the place of Custoza a fraction of the municipality of Sommacampagna famous for the bloody battles during the first and the third war of independence. The Bianco di Custoza has made with the grapes of the variety Trebbiano toscano (also says Roman castles), Garganega, Tocai friulano (known as trebbianello), with additions of Cortese (known as Bianca Fernanda), Malvasia toscano, Riesling italiano, Pinot grigio and Chardonnay.
It has pale yellow colour. Perfume: slightly aromatic. Taste: delicate, with a slightly bitter final. Analogous characteristics have the Bianco di Custoza Spumante, a sparkling wine.
It exists the Bianco di Custoza superiore and the Bianco di Custoza passito (a withered wine).

Soave
The Soave is produced with grapes of the vine Garganega. Can contribute, thin to a maximum of 30%, also grapes of the vines Pinot grigio, Chardonnay and Trebbiano di Soave. It was one of the first italian wines to be recognized with the label D.O.C.(the production regulation is of year 1968), the Soave and the Soave classico have a pale yellow color tending to the green one. The perfume is characteristic, intense and delicate: it remembers the flowers of grapevine, of elder and of cherry. The taste is dry, fresh, harmonic, with some bitter nuances. It is recommended with every dish, but the best combinations are with the fish or with the lean hors-d’ouvre. The Soave spumante is a sparkling wine with a yellow pale tending to the vivid green, and has an intense and delicate characteristic perfume, a harmonic taste (a little bitter in the types extra brut, brut, extra dry, dry). Soave Superiore
The wine Soave has labeled as Soave Superiore with the specification D.O.C.G. when has a considerable minimal alcoholic gradation (10,5 degrees) and isn’t commercialized before March. Recioto di Soave
When the same grapes of the Soave superiore are submitted to a light withering with the purpose to reach an elevated natural alcoholic gradation, we obtain the wine Recioto di Soave D.O.C.G., with the fascinating clear gilded yellow color.
The perfume is intense, with strong nuances of fruit. The taste it is light sweet or sweet, velvety, harmonic. It must have a minimal alcoholic content of 14 degrees. It doesn’t go only very well with the traditional cakes of Verona but also with the aged or aromatic cheeses. There is also the Recioto di Soave like sparkling wine. The Recioto di Soave sparkling wine is gilded yellow, it has an intense and fruity smell and a sweet, harmonic and strong taste.

 

What is the mean of the initials D.O.C., D.O.C.G. for the wine?
D.O.C. means Denomination of Controlled Origin and D.O.C.G. means Denomination of Controlled and Guaranted Origin. The wines with the quality label D.O.C. and D.O.C.G. are produced respecting a detailed production regulation which disciplinates each aspect of the production such: the limited area of origin, yield for each hectare (the permitted maximum quantity of grape for each hectare of vineyard), the different permitted varieties of vines, the minimal ageing and many others parameters. What is not clearly provided, is forbidden. The D.O.C.G. has a further control: the wines D.O.C.G. (30 in all Italy) must be tasted from a official commission of experts and must be tested to control a serie of chemical parameters which are provided from their production regulation. The most important of these parameters is the dry minimal residuum.
